Homemade Soft Donuts Recipe

- 160 ml fresh milk
- 13 g fresh yeast or 5 g dry yeast
- 70 g sugar
- 1 egg
- 1 egg yolk

- 350 g gluten-free bread flour
- Seeds from half a vanilla pod
- 40 g melted butter
- A pinch of salt
- Granulated sugar for coating
- Vegetable oil for frying
Instructions:
- Warm the milk in a saucepan until it’s lukewarm.
- In a bowl, combine a portion of the lukewarm milk (about 20 ml) with 1 tablespoon of sugar and the yeast. Mix well.
- Add the eggs, grated lemon and orange zest, remaining milk, sugar, and mix until combined.
- Stir in the flour and vanilla seeds vigorously for a few minutes. You can transfer the dough to a stand mixer if you have one.
- Gradually add the softened butter, one piece at a time, until fully incorporated, then add the salt. The dough should be soft and elastic.
- Shape the dough into a ball and place it in a bowl with a Tescoma Italia gel heating pad to proof for 3 hours.
- After proofing, roll out the dough with a rolling pin to a thickness of about 1 cm.
- Using the Tescoma Italia donut mold, cut out the donuts and place them on a baking tray lined with parchment paper.
- Cover the tray with plastic wrap and let the donuts proof for another 45 minutes in a warm place, such as a preheated oven.
- Fry the donuts in hot oil (170°C), turning them to ensure even cooking on both sides. Drain on paper towels and coat with granulated sugar using tongs.
