Ingredients
- 2 cups sour cherries, pitted (or substitute with sweet cherries, adjusting sugar)
- 1/2 cup butter
- 1 cup all-purpose flour
- 1 cup granulated sugar, divided
- 1 teaspoon baking powder
- 1 cup milk
- 1 tablespoon all-purpose flour (for tossing with cherries)
Instructions
- Prepare Cherries: Rinse and pit the sour cherries. Alternatively, use sweet cherries and reduce the sugar accordingly. A cherry pitter can speed up the pitting process.
- Preheat Oven: Preheat the oven to 350°F (175°C). Place the butter in a 9×13 inch baking dish and melt it in the oven, about 5 minutes.
- Make Batter: In a medium bowl, combine flour, 3/4 cup sugar, and baking powder. Stir well, then mix in the milk to create a batter.
- Assemble Cobbler: Pour the batter into the baking dish with melted butter. Do not stir. Pat dry the pitted cherries and place them in a separate bowl. Toss them with 1 tablespoon of flour and 3/4 cup sugar until evenly coated.
- Bake: Spread the coated cherries evenly over the batter. Again, do not stir. Bake in the preheated oven for 50-60 minutes or until golden brown. Test for doneness by inserting a toothpick into the center; it should come out clean.
- Serve: Once baked, let the cobbler cool slightly. Optionally, dust with powdered sugar before serving with vanilla ice cream or whipped cream.
