Instructions:

  1. Warm the milk in a saucepan until it’s lukewarm.
  2. In a bowl, combine a portion of the lukewarm milk (about 20 ml) with 1 tablespoon of sugar and the yeast. Mix well.
  3. Add the eggs, grated lemon and orange zest, remaining milk, sugar, and mix until combined.
  4. Stir in the flour and vanilla seeds vigorously for a few minutes. You can transfer the dough to a stand mixer if you have one.
  5. Gradually add the softened butter, one piece at a time, until fully incorporated, then add the salt. The dough should be soft and elastic.
  6. Shape the dough into a ball and place it in a bowl with a Tescoma Italia gel heating pad to proof for 3 hours.
  7. After proofing, roll out the dough with a rolling pin to a thickness of about 1 cm.
  8. Using the Tescoma Italia donut mold, cut out the donuts and place them on a baking tray lined with parchment paper.
  9. Cover the tray with plastic wrap and let the donuts proof for another 45 minutes in a warm place, such as a preheated oven.
  10. Fry the donuts in hot oil (170°C), turning them to ensure even cooking on both sides. Drain on paper towels and coat with granulated sugar using tongs.
